There is no real difference between the normal and the French placket other than the fact that you can’t pick a contrast placket with a French placket since there is no separation from the French placket and the rest of the shirt. If a contrast placket doesn’t interest you, then it’s just a matter of which dress shirt placket type you are used to and would like to have, that is, of course, if you didn’t want a covered placket.
